Our First Popup Event in Thao Dien, HCMC
This past weekend, MDA Fruits hosted our very first Popup Summer in the heart of Thao Dien, Ho Chi Minh City – a vibrant spot where local and international communities come together.
Our goal was simple: to introduce gift products made from Vietnam’s tropical fruits – freeze-dried snacks and detox drinks – to the expat community living in HCMC. 🍍🥭🍓
It was a meaningful first step for us. We had the chance to share the natural taste of Vietnam in a modern, healthy form, listen to valuable feedback, and most importantly, connect with friends, partners, and new customers who share the same love for good food and well-being.

Red Dragon Fruit - A Gem of Vietnamese Agriculture
With its ideal tropical climate, Vietnam is a paradise for fruits, especially dragon fruit. Regions like Binh Thuan, Long An, and Tien Giang are blessed with fertile soil and year-round sunshine, creating perfect conditions for cultivating high-quality red dragon fruit. Beyond its vibrant, eye-catching color, this variety boasts a natural sweetness, rich flavor, and distinctive aroma, captivating even the most discerning palates.

Elevating Value Through Modern Drying Technology
Instead of exporting fresh fruit, Vietnamese manufacturers are adopting modern technologies to create high-value products. A key innovation is low-temperature drying (soft drying) – a groundbreaking solution that differs significantly from traditional drying methods. The goal is to gently remove moisture while preserving the dragon fruit's natural chewiness, vibrant color, and essential nutrients.
- Low-Temperature Dehydration: This technique uses precisely controlled low heat over an extended period. Consequently, the dragon fruit's vitamins, natural enzymes, and brilliant pigments are maximally preserved, which high-heat drying cannot achieve.
- Freeze-Drying: This technology involves rapidly freezing the fruit and then removing water in vapor form (sublimation) under low pressure. This process keeps the fruit's cellular structure nearly intact, ensuring flavor, color, and nutrient content remain remarkably close to that of fresh fruit. This method reduces the product's moisture content to below 5%, significantly enhancing its shelf life and ease of transportation.
These soft-dried dragon fruit slices are not just a convenient snack but also a perfect ingredient for healthy products like healthy snacks or fruit-infused water (water infusion). This is a smart approach, enabling Vietnamese dragon fruit to reach further, conquer demanding international markets, and write a success story for modern agriculture.
Kraft paper isn’t the most “easy-going” material, especially when it comes to packing freeze-dried fruits – products that are super sensitive to air and temperature.
Unlike regular dried fruits (which use heat, oil, sugar, or salt), freeze-drying removes moisture in a vacuum environment, leaving only 3–5% water. This way, the fruit keeps its natural color, freshness, and pure flavor.
Choosing Kraft paper means shorter shelf life, but it’s a step toward an eco-friendly product line. And this isn’t just a passing trend – it’s a choice rooted in the ideals of the younger generation, aiming for a more sustainable future 🌍.
