Elevating Value Through Modern Drying Technology
Instead of exporting fresh fruit, Vietnamese manufacturers are adopting modern technologies to create high-value products. A key innovation is low-temperature drying (soft drying) – a groundbreaking solution that differs significantly from traditional drying methods. The goal is to gently remove moisture while preserving the dragon fruit's natural chewiness, vibrant color, and essential nutrients.
- Low-Temperature Dehydration: This technique uses precisely controlled low heat over an extended period. Consequently, the dragon fruit's vitamins, natural enzymes, and brilliant pigments are maximally preserved, which high-heat drying cannot achieve.
- Freeze-Drying: This technology involves rapidly freezing the fruit and then removing water in vapor form (sublimation) under low pressure. This process keeps the fruit's cellular structure nearly intact, ensuring flavor, color, and nutrient content remain remarkably close to that of fresh fruit. This method reduces the product's moisture content to below 5%, significantly enhancing its shelf life and ease of transportation.
